First year we were only allowed to buy 2nd items, second year we re-gifted a book from our own collection to someone else, and the third year we did Secret Santa but with poems that remind us of the person!

I always love something tasty to eat, which I wouldn't buy for myself like a bunch of pomegranates(in season in europe right now) or more expensive nuts like macademia or brazilnuts (no hazelnuts or peanuts please, walnuts are just about right). Fairtrade coffee, tea or kakao is also a great idea for hot beverage fans. Self-made marmelades, pickles or liquor is also a great personal favourite of mine.
My old neighour also gave a substantial charitable donation in our name every christmas, which was really nice. Later on I even could recommend which charity I would like to be chosen for next year. (Of course you only do that when you at least have a little other present ready, especially for children and young adults. But sometimes more than 50$ is too much and some people can give more, so there you have a way for it if you're rich ;D).
My favourite gift is, when my aunts ask me, what they can make for me next time the knit or tailor(Just don't order an irish pullover, I'm still waiting on that for over 8 years^^). I even got my uncle to help me build my first DIY wardrobe with sliding doors after one of my birthdays :D
And don't ever forget: For any young adult, student or "just married"-person, money(from 25$ and upwards is always great, don't forget to wrap it nicely. just think a little about the amount you can comfortably give and what they might need. If it feels awkward to yourself, choose another gift).
